Assuming the merchant has a wallet and has the point of sale set up already, what are the best options at this time for them to be able to convert to fiat, or at least to be able to lock in the exchange rate at the time the sale is made?

So I need to pay .40 cents to the government. However, because the market value changes, would they then need to calculate how much more they gained after the fact and pay capital gains on that? And then multiply doing that by every transaction?
